Civics - FOR CREDIT (Gr. 11-12)
The purpose of this course is to provide an intensive study of government, law, and citizenship. Successful completion fulfills the social studies graduation requirement in Civics. Enrollment is on a space-available basis.The class will be taught remotely. Login instructions will be emailed to registrants before the start of class. This course is open to Farmington High School students entering grades 11-12 only.

This is a Series of Baking Come along with Chef Joe as you learn how to make Italian breads, breakfast delights, pies and more! In this hands-on series, you will make (and eat!) your own fresh bread and pastries. Ingredients and supplies are provided, but bring a container to bring home your leftovers! Italian Bread Baking Who doesn't love the smell of fresh baking bread? Come and learn how to make some wonderfully tempting Italian breads and Focaccia? Chef Joe shows you how to create some Italian classics and as a bonus learn how to make a tasty Panzanella Salad. The menu for this course includes: Semolina Bread, Grissini (Italian Breadsticks), Pane Carasau (Sardinian Flatbread), Focaccia, Panzanella Salad. Breakfast Baking Nothing beats the smell of freshly baked goods wafting through the house on a weekend morning. Luckily, these easy recipes are easy enough to make for a lazy weekend morning or when you have a house full of guests. Learn to make a selection of Chef Joe’s favorites, you'll leave able to create the perfect breakfast delights every time! The menu for this course includes: Country Biscuits, Lemon Blueberry Muffins, Ham & Gruyere Popovers with French Eggs, Sour Cream Coffee Cake Loaves, Ginger Scones. Italian Bread Baking 2.0 Who doesn't love the smell of fresh baking bread? Come and learn how to make some wonderfully tempting breads, in the next part of our very popular Breadseries. Chef Joe will walk you through the steps to create a wonder assortment of breads, ready for you to recreate at home for your comforting goodness! The menu for this course includes: Focaccia with grapes, Braided Italian loaf Bread, Crescentine (W/Charcuterie), Prosciutto onion bread Pie Perfection Join us in the Cookshop Kitchen to learn how to prepare an array of different kinds of sweet and savory pies completely from scratch using fresh, high-quality ingredients and easy-to-master cooking techniques. Get ready to have the whole neighborhood hanging out by window sill. The menu for this course includes: Chocolate peanut butter pie, Fruits of The Forest Hand Pie, Scandinavian Apple Pie Squares, Cheeseburger Pie.

Cake Decorating for Beginners

Learn to stack, ice, and decorate a 3-tier cake in this two-hour class, taught by the owner of the Great British Cupcake. In this adult cake class, create a 3-layer cake and learn about the usage of fondant, chocolate and other decorating mediums. Students learn all the professional tips and tricks so they never need buy a store-bought cake again. Disposable apron, cake box and all class supplies included. Participants leave with a fully decorated cake in a cake box. Cakes can be frozen for up to 30 days.

Cheesemaking - Ricotta, Mascarpone, and Feta

Making fresh, soft cheese at home is easy and fun! Learn the process and equipment needed to make whole milk ricotta, mascarpone, and feta cheese. Course fee includes the cost of supplies. This course will fulfill the prerequisite for Advanced Beginner cheesemaking class.

Ready to take the next step in making cheese? In this class we will learn to make herbed Havarti and spice-rubbed Montasio. These cheeses involve some new techniques and will expand your knowledge of cheesemaking. Prerequisite: Student has already taken either the Mozzarella or the Feta class.

FOOD TOUR with Prudence Sloane - A DONG'S SUPERMARKET & VIETNAMESE Luncheon

A Dong Supermarket is over 30,000 square feet of Chinatown in West Hartford, complete with hanging ducks, live fish, exotic produce and all the ingredients you need to cook Chinese, Vietnamese, Thai and Japanese. Prudence Sloane will guide you through this most extraordinary supermarket and give you expert advice on how to cook and use many of the products offered. All secrets will be revealed. Afterwards we feast on Vietnamese specialties at Pho Boston next door. We will meet at Cha Papi, next to A Dong's Supermarket, between 9:30 am and 10 am.Cha Papi is an Asian coffee shop with wonderful rice donuts and amazing coffee (not included on tour). Bring a sweater - the supermarket can get cold. Food allergies and dietary restrictions (shrimp, pork, chicken, beef) must be noted upon registering.
